Ingredients
- Pasta: 250 grams (9 oz) of spaghetti or fettuccine
- Ricotta Cheese: 250 grams (9 oz)
- Lemon: 1 lemon (zest and juice)
- Olive Oil: 2 tablespoons
- Garlic: 2 cloves, minced
- Fresh Parsley: 1/4 cup, chopped
- Parmesan Cheese: 1/4 cup, grated
- Salt and Pepper: to taste
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente, about 8 to 10 minutes. Reserve 1 cup of pasta water, then drain.
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- In a mixing bowl, combine ricotta cheese with lemon zest and juice, and season with salt and pepper.
- Add the drained pasta to the skillet, pour the ricotta mixture over it, and toss gently. Add reserved pasta water as needed to achieve desired creaminess.
- Plate the pasta, garnish with Parmesan cheese and parsley, and serve warm.
