Creamy crab and shrimp bisque is a rich and velvety soup that combines the delicate flavors of seafood with a smooth, creamy base.


Ingredients

  • Fresh crab meat: 1 cup
  • Shrimp: 1 cup, peeled and deveined
  • Heavy cream: 2 cups
  • Fish stock: 4 cups
  • Onion: 1 medium, finely chopped
  • Garlic: 2 cloves, minced
  • Celery: 2 stalks, finely chopped
  • White wine: 1/2 cup
  • Thyme: 1 teaspoon, fresh (or 1/2 teaspoon dried)
  • Cayenne pepper: 1/4 teaspoon
  • Olive oil: 2 tablespoons
  • Salt and pepper: to taste

Instructions

  1. Prepare the seafood by peeling and deveining the shrimp and checking for shell pieces in the crab meat.
  2. Sauté the onion, garlic, and celery in olive oil over medium heat for 5-7 minutes until soft and translucent.
  3. Deglaze the pot with white wine, simmer for 2-3 minutes, then add fish stock and simmer for 10 minutes.
  4. Add crab meat and shrimp, cook for 5 minutes, then blend the mixture until smooth.
  5. Return to low heat, stir in heavy cream, thyme, and cayenne pepper, season with salt and pepper, and heat through for 5 minutes before serving.
