Instructions
- Wash and trim the spinach.
- In a large pot, melt butter over medium heat.
- Add flour and whisk for 1-2 minutes.
- Slowly add milk, whisking until smooth.
- Stir in heavy cream and nutmeg, cooking until thickened.
- Add spinach, stirring until wilted.
- Season with salt and pepper.
- Mix in Parmesan cheese until melted.
