Ingredients

- 1 cup long-grain rice
- 2 cups vegetable broth
- 1/2 cup dried cranberries
- 1 orange, zested and juiced
- 1 small onion, chopped
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- In a pot, heat olive oil over medium heat.
- Add chopped onion and sauté until translucent.
- Add rice and stir for 2 minutes.
- Pour in vegetable broth, orange juice, cranberries, and zest.
- Season with salt and pepper.
- Bring to a boil, then reduce heat to low and cover.
- Cook for 18-20 minutes or until rice is tender.
- Fluff with a fork before serving.

- Use fresh cranberries for a tart flavor.
- Pair with grilled meats or fish.
- Store leftovers in the refrigerator for up to 3 days.
