Description

Ingredients

  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup milk

  • 1 cup fresh cranberries
  • Zest of 1 orange
  • Juice of 1 orange

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a muffin tin with paper liners.
  3. In a bowl, mix flour, sugar, baking powder, and salt.
  4. In another bowl, whisk together melted butter, egg, milk, vanilla, orange zest, and orange juice.
  5. Combine wet and dry ingredients until just mixed.
  6. Fold in cranberries.
  7. Fill muffin cups about 3/4 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool before serving.
