Ingredients
- Ground beef: 1 lb (450 g)
- Sweet corn: 1 cup (canned or frozen)
- Black beans: 1 can (15 oz or 425 g), drained and rinsed
- Diced tomatoes: 1 can (15 oz or 425 g), undrained
- Cornbread mix: 1 package (about 8.5 oz or 240 g)
- Shredded cheese: 1 cup (about 100 g), cheddar or a blend
- Onion: 1 medium, diced
- Bell pepper: 1 medium, diced (any color)
- Olive oil: 1 tablespoon
- Chili powder: 1 teaspoon
- Cumin: 1 teaspoon
- Salt: to taste
- Pepper: to taste
- Optional toppings: sour cream, sliced jalapeños, or green onions
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil and sauté diced onion and bell pepper for 3-4 minutes.
- Add ground beef to the skillet, breaking it up as it cooks until browned (5-7 minutes). Drain excess fat.
- Prepare the cornbread mix according to package instructions.
- Combine sweet corn, black beans, diced tomatoes, chili powder, cumin, salt, and pepper with the meat mixture. Simmer for 5 minutes.
- Grease a 9×13 inch baking dish, spread the meat mixture, and pour the cornbread batter on top.
- Bake for 25-30 minutes until the cornbread is golden brown and a toothpick comes out clean.
Notes
- For a vegetarian option, substitute ground beef with cooked lentils or crumbled tofu.
- For a spicy twist, add diced jalapeños or use spicy ground meat.
- Let the casserole cool for a few minutes before serving for easier slicing.
