Ingredients

  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 cup salsa
  • 1 package cornbread mix
  • 1 egg
  • 1/3 cup milk
  • 1 cup shredded cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, brown the ground beef over medium heat.
  3. Add black beans, corn, and salsa to the skillet. Stir to combine.
  4. In a separate bowl, mix cornbread mix, egg, and milk until smooth.
  5. Spread the beef mixture in a greased baking dish.
  6. Pour the cornbread batter over the beef mixture.
  7. Sprinkle cheese on top.
  8. Bake for 25-30 minutes or until golden brown.
