Description

Cowboy casserole is a hearty dish that combines ground beef, beans, and cheese baked together.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) black beans, drained
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheddar cheese
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup tortilla chips, crushed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat.
  3. Drain excess fat from the beef.
  4. Add the taco seasoning, beans, corn, and diced tomatoes to the skillet. Mix well.
  5. Transfer the mixture to a baking dish.
  6. Top with crushed tortilla chips and shredded cheese.
  7. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  8. Allow to cool for a few minutes before serving.
