  • 2 chicken breasts (about 500 grams or 1 lb)
  • 100 grams (7 tablespoons) cowboy butter
  • 200 grams (1 cup) cherry tomatoes
  • Fresh parsley
  • Salt and pepper
  • Grated Parmesan cheese (optional)

Cowboy Butter Ingredients

  • 113 grams (1/2 cup) unsalted butter
  • 3 cloves garlic
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh chives
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Season the chicken breasts with salt and pepper. Heat a skillet over medium heat and add 2 tablespoons of cowboy butter. Cook the chicken for 5-7 minutes on each side until golden brown. Remove and let rest before slicing.
  2. Prepare the cowboy butter sauce by mixing softened butter, garlic, lemon juice, and fresh herbs. Set aside.
  3. Cook the linguine in salted boiling water according to package instructions (8-10 minutes). Reserve 1/2 cup of pasta water before draining.
  4. In the same skillet, sauté halved cherry tomatoes for 2-3 minutes. Add the cooked linguine, sliced chicken, and remaining cowboy butter. Toss gently, adding reserved pasta water as needed.
  5. Serve the linguine garnished with fresh parsley and optional grated Parmesan cheese.
