Cowboy Butter Ingredients
- 113 grams (1/2 cup) unsalted butter
- 3 cloves garlic
- 2 tablespoons lemon juice
- 2 tablespoons fresh parsley
- 1 tablespoon fresh chives
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Season the chicken breasts with salt and pepper. Heat a skillet over medium heat and add 2 tablespoons of cowboy butter. Cook the chicken for 5-7 minutes on each side until golden brown. Remove and let rest before slicing.
- Prepare the cowboy butter sauce by mixing softened butter, garlic, lemon juice, and fresh herbs. Set aside.
- Cook the linguine in salted boiling water according to package instructions (8-10 minutes). Reserve 1/2 cup of pasta water before draining.
- In the same skillet, sauté halved cherry tomatoes for 2-3 minutes. Add the cooked linguine, sliced chicken, and remaining cowboy butter. Toss gently, adding reserved pasta water as needed.
- Serve the linguine garnished with fresh parsley and optional grated Parmesan cheese.
