- 4 large eggs
- 1/2 cup shredded cheese
- 1/4 cup chopped spinach
- 1/4 cup diced bell peppers
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine cottage cheese, eggs, shredded cheese, spinach, and bell peppers.
- Season with salt and pepper.
- Pour the mixture into greased muffin tins.
- Bake for 20-25 minutes or until set.
- Allow to cool slightly before removing from the tins.
