- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup shredded cheese
- 1/2 cup chopped spinach
- 1/4 cup diced bell pepper
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, blend the cottage cheese and eggs until smooth.
- Add the shredded cheese, spinach, bell pepper, salt, and pepper. Mix well.
- Grease a muffin tin with cooking spray.
- Pour the mixture into the muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes or until the bites are set and slightly golden.
- Let cool for a few minutes before removing from the muffin tin.
