Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup shredded cheese
  • 1/2 cup chopped spinach
  • 1/4 cup diced bell pepper

  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, blend the cottage cheese and eggs until smooth.
  3. Add the shredded cheese, spinach, bell pepper, salt, and pepper. Mix well.
  4. Grease a muffin tin with cooking spray.
  5. Pour the mixture into the muffin tin, filling each cup about 3/4 full.
