- 1 cup cottage cheese
- 3 large eggs
- 1/4 cup almond flour
- 1/4 teaspoon baking powder
- 1/2 cup fresh blueberries
- 1 tablespoon honey
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix cottage cheese, eggs, honey, and baking powder until smooth.
- Fold in almond flour and blueberries gently.
- Line a baking sheet with parchment paper.
- Scoop the mixture onto the baking sheet in small rounds.
- Bake for 20-25 minutes or until golden brown.
- Let cool before serving.
