Ingredients
- Soba noodles: 200 grams
- Sesame oil: 2 tablespoons
- Soy sauce: 3 tablespoons
- Rice vinegar: 1 tablespoon
- Honey: 1 tablespoon
- Scallions: 2, finely sliced
- Sesame seeds: 2 tablespoons, toasted
- Cucumber: 1 medium, julienned
- Salt: to taste
- Water: for boiling noodles
Instructions
- Bring a large pot of water to a rolling boil and cook the soba noodles according to package instructions (4-6 minutes).
- Drain the noodles and rinse them under cold water to stop the cooking process.
- In a small bowl, combine sesame oil, soy sauce, rice vinegar, and honey. Whisk until well combined.
- In a large mixing bowl, add the cooled soba noodles, scallions, and cucumber. Pour the sesame sauce over and gently toss to combine.
- Transfer to a serving dish, sprinkle with toasted sesame seeds, and serve immediately.
