Ingredients

- 1 pound white fish fillets
- 1 can (14 oz) coconut milk
- 4 cups fish stock
- 2 limes, juiced
- 1 tablespoon fish sauce
- 1 tablespoon ginger, grated
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 cup cherry tomatoes, halved
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add garlic and ginger, sauté until fragrant.
- Add red bell pepper and cherry tomatoes, cook for 5 minutes.
- Pour in fish stock and coconut milk, bring to a simmer.
- Add fish fillets and cook for 10 minutes.
- Stir in lime juice and fish sauce.
- Garnish with cilantro before serving.

- Use any firm white fish.
- Adjust lime juice to taste.
- Serve with rice or bread if desired.
