Coconut Lime Bars are a delicious dessert with a tropical twist.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream the butter and sugar together.
- Add the eggs, lime juice, and lime zest. Mix well.
- In another bowl, combine the flour, coconut, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients. Mix until combined.
- Pour the batter into a greased baking pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow to cool, then cut into bars.
Notes
- Store in an airtight container.
- Can be dusted with powdered sugar before serving.
