Delicious coconut cream pancakes for a tropical breakfast.
Ingredients

- 1 cup all-purpose flour
- 1 cup coconut cream
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 eggs
- 2 tablespoons melted butter
Instructions
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, combine coconut cream, milk, eggs, and melted butter.
- Pour wet ingredients into dry ingredients. Mix until just combined.
- Heat a skillet over medium heat and grease it lightly.
- Pour batter onto the skillet, using 1/4 cup for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
Notes
- Serve with maple syrup or fresh fruit.
- You can substitute coconut cream with coconut milk for a lighter version.
- Adjust sugar according to your taste.
