Description

Delicious coconut cream pancakes for a tropical breakfast.


Ingredients

  • 1 cup coconut cream
  • 2 tablespoons sugar
  • 1 tablespoon baking powder

  • 1/2 cup milk
  • 2 eggs
  • 2 tablespoons melted butter

Instructions

  1. In a bowl, mix flour, sugar, baking powder, and salt.
  2. In another bowl, combine coconut cream, milk, eggs, and melted butter.
  3. Pour wet ingredients into dry ingredients. Mix until just combined.
  4. Heat a skillet over medium heat and grease it lightly.
  5. Pour batter onto the skillet, using 1/4 cup for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
