Description

Coconut caramel popcorn is a sweet and crunchy snack made with light popcorn coated in rich caramel and coconut.


Ingredients

  • 1 cup popcorn kernels
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1/4 cup corn syrup
  • 1/2 teaspoon salt
  • 1 cup shredded coconut
  • 1/2 teaspoon vanilla extract

Instructions

  1. Pop the popcorn kernels using an air popper or on the stovetop.
  2. In a saucepan, combine sugar, butter, corn syrup, and salt. Cook over medium heat until it boils.
  3. Stir continuously for 5 minutes, then remove from heat.
  4. Add vanilla extract and shredded coconut to the mixture, stirring to combine.
  5. Pour the caramel mixture over the popped popcorn and mix well.
  6. Spread the popcorn on a baking sheet lined with parchment paper.
  7. Bake at 250°F (120°C) for 30 minutes, stirring every 10 minutes.
  8. Remove from the oven and let cool before serving.
