A refreshing and hearty club sandwich pasta salad that combines the flavors of a classic club sandwich with pasta.

- 8 oz elbow macaroni
- 4 slices cooked bacon, chopped
- 1 cup cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded lettuce
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni according to package instructions. Drain and cool.
- In a large bowl, combine the cooked macaroni, bacon, chicken, tomatoes, and lettuce.
- In a small bowl, mix mayonnaise, Dijon mustard, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other vegetables like cucumbers or bell peppers.
- Use leftover chicken for a quicker prep time.
