Ingredients

- 2 cups cucumbers, sliced
- 1 cup clementines, peeled and segmented
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh mint, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine cucumbers, clementines, red onion, and mint.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently.
- Serve immediately or chill for 30 minutes before serving.
