Description

Classic Lobster Newburg is a rich and creamy seafood dish featuring lobster, often served over buttered toast or in a puff pastry shell.


Ingredients

  • 1 pound lobster meat, cooked and chopped
  • 2 tablespoons butter
  • 1/4 cup shallots, finely chopped
  • 1/2 cup heavy cream
  • 1/2 cup sherry
  • 2 egg yolks
  • Salt to taste
  • Pepper to taste
  • Chives for garnish

Instructions

  1. Melt butter in a skillet over medium heat.
  2. Add shallots and sauté until translucent.
  3. Stir in lobster meat and cook for 2 minutes.
  4. Add sherry and let it simmer for 3 minutes.
  5. Reduce heat and stir in heavy cream.
  6. In a bowl, whisk egg yolks with a bit of the sauce, then return to the skillet.
  7. Season with salt and pepper.
  8. Serve over toast or in pastry shells, garnished with chives.
