Description
Classic Lobster Newburg is a rich and creamy seafood dish featuring lobster, often served over buttered toast or in a puff pastry shell.

- 1 pound lobster meat, cooked and chopped
- 2 tablespoons butter
- 1/4 cup shallots, finely chopped
- 1/2 cup heavy cream
- 1/2 cup sherry
- 2 egg yolks
- Salt to taste
- Pepper to taste
- Chives for garnish
Instructions
- Melt butter in a skillet over medium heat.
- Add shallots and sauté until translucent.
- Stir in lobster meat and cook for 2 minutes.
- Add sherry and let it simmer for 3 minutes.
- Reduce heat and stir in heavy cream.
- In a bowl, whisk egg yolks with a bit of the sauce, then return to the skillet.
- Season with salt and pepper.
- Serve over toast or in pastry shells, garnished with chives.
Notes
- This dish is best served immediately.
- You can substitute lobster with shrimp or crab.
- For a lighter version, use half-and-half instead of heavy cream.
