Ingredients
- All-purpose flour: 2 cups (240 g)
- Pumpkin puree: 1 cup (240 g)
- Brown sugar: 3/4 cup (150 g), packed
- Eggs: 2 large
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: 1/2 teaspoon
- Baking powder: 2 teaspoons
- Baking soda: 1/2 teaspoon
- Salt: 1/2 teaspoon
- Milk: 1/2 cup (120 ml)
- Vegetable oil: 1/4 cup (60 ml)
- Granulated sugar: 1/2 cup (100 g)
- Ground cinnamon: 1 tablespoon
Instructions
- Preheat your oven to 350°F (175°C) and grease your donut pan.
- In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix the wet ingredients: pumpkin puree, brown sugar, eggs, milk, and vegetable oil until smooth.
- Gradually add the wet mixture to the dry ingredients and stir gently until just combined.
- Fill each donut cavity about 2/3 full with the batter.
- Bake for 10-12 minutes until they spring back when pressed and a toothpick comes out clean.
- Prepare the cinnamon sugar coating by mixing granulated sugar and ground cinnamon in a small bowl.
- Let the donuts cool for 5 minutes, then transfer to a wire rack.
- Brush each donut with melted butter or spray with cooking spray, then roll in the cinnamon sugar mixture until fully coated.
Notes
- Use sugar pumpkins or canned pumpkin puree for the best flavor.
- Aim for a thick but pourable batter; add milk if too thick.
- Store leftovers in an airtight container for up to three days or freeze for up to three months.
