Ingredients
- Brussels sprouts – 500g
- Carrots – 300g
- Parsnips – 300g
- Green beans – 200g
- Olive oil – 3 tablespoons
- Garlic – 3 cloves
- Salt – to taste
- Pepper – to taste
- Fresh thyme – 2 sprigs
Instructions
- Preheat your oven to 200°C (400°F).
- Wash and chop the Brussels sprouts, carrots, and parsnips.
- Trim the ends of the green beans.
- In a large bowl, combine all vegetables.
- Drizzle with olive oil and add minced garlic, salt, and pepper.
- Toss until evenly coated.
- Spread the vegetables on a baking tray.
- Add fresh thyme on top.
- Roast in the oven for 25-30 minutes, stirring halfway through.
- Serve warm.
