Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup green beans, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup cooked pasta (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add vegetable broth, diced tomatoes, green beans, thyme, and rosemary.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add cooked pasta if using. Season with salt and pepper.
  7. Serve hot.
