Description

Classic Christmas pudding recipe for the festive season.


Ingredients

  • 250g mixed dried fruits
  • 100g currants
  • 100g raisins
  • 50g chopped nuts
  • 100g brown sugar
  • 200g breadcrumbs
  • 100g flour
  • 2 teaspoons baking powder
  • 1 teaspoon mixed spice
  • 1/2 teaspoon salt
  • 2 eggs
  • 100ml milk
  • 50ml brandy

Instructions

  1. Preheat your oven to 150°C (300°F).
  2. In a large bowl, mix the dried fruits, nuts, and brown sugar.
  3. Add breadcrumbs, flour, baking powder, mixed spice, and salt. Stir well.
  4. In another bowl, whisk eggs, milk, and brandy.
  5. Combine wet and dry ingredients. Mix until smooth.
  6. Pour the mixture into a greased pudding basin.
  7. Cover with parchment paper and steam for 2 hours.
  8. Let it cool, then store in a cool place until serving.

Notes

  • Best made a few weeks in advance.
  • Serve warm with custard or cream.
  • Can be reheated by steaming again.
