Classic Christmas pudding recipe for the festive season.
Ingredients

- 250g mixed dried fruits
- 100g currants
- 100g raisins
- 50g chopped nuts
- 100g brown sugar
- 200g breadcrumbs
- 100g flour
- 2 teaspoons baking powder
- 1 teaspoon mixed spice
- 1/2 teaspoon salt
- 2 eggs
- 100ml milk
- 50ml brandy
Instructions
- Preheat your oven to 150°C (300°F).
- In a large bowl, mix the dried fruits, nuts, and brown sugar.
- Add breadcrumbs, flour, baking powder, mixed spice, and salt. Stir well.
- In another bowl, whisk eggs, milk, and brandy.
- Combine wet and dry ingredients. Mix until smooth.
- Pour the mixture into a greased pudding basin.
- Cover with parchment paper and steam for 2 hours.
- Let it cool, then store in a cool place until serving.
Notes
- Best made a few weeks in advance.
- Serve warm with custard or cream.
- Can be reheated by steaming again.
