- 4 cups Brussels sprouts, halved
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cranberry sauce
- 1 cup mashed potatoes
- 1/2 cup butter
- 1/4 cup milk
Instructions
- Preheat the oven to 400°F (200°C).
- Toss Brussels sprouts with olive oil, salt, and pepper.
- Spread Brussels sprouts on a baking sheet.
- Roast for 20-25 minutes until golden.
- Prepare mashed potatoes by boiling potatoes until tender.
- Drain and mash with butter and milk.
- Serve cranberry sauce alongside roasted Brussels sprouts and mashed potatoes.
Notes
- Feel free to add nuts to the Brussels sprouts for added crunch.
- You can use canned or homemade cranberry sauce.
- Adjust seasoning to taste.
