Ingredients

- 1 cup all-purpose flour
- 1 cup cocoa powder
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 cup almond milk
- 2 cups grated zucchini
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the flour, cocoa powder, sugar, baking soda, and salt.
- Add the oil, almond milk, vanilla extract, and grated zucchini to the dry ingredients.
- Mix until just combined.
- Pour the batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Store leftovers in an airtight container.
- Can add nuts or chocolate chips for extra texture.
- Best served with a dusting of powdered sugar.
