Description

Crispy egg rolls filled with a spicy chili mixture.


Ingredients

  • 1 cup cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup red bell pepper, diced
  • 1 cup shredded cheese
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 10 egg roll wrappers
  • Oil for frying

Instructions

  1. In a large bowl, combine chicken, black beans, corn, red bell pepper, and cheese.
  2. Add chili powder, cumin, salt, and pepper. Mix well.
  3. Place a spoonful of the mixture in the center of an egg roll wrapper.
  4. Fold the sides over and roll tightly. Seal with water.
  5. Heat oil in a frying pan over medium heat.
  6. Fry egg rolls until golden brown, about 3-4 minutes per side.
  7. Drain on paper towels before serving.

Notes

  • Serve with salsa or guacamole.
  • Can be baked instead of fried for a healthier option.
