Description
Crispy egg rolls filled with a spicy chili mixture.
Ingredients

- 1 cup cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup red bell pepper, diced
- 1 cup shredded cheese
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 10 egg roll wrappers
- Oil for frying
Instructions
- In a large bowl, combine chicken, black beans, corn, red bell pepper, and cheese.
- Add chili powder, cumin, salt, and pepper. Mix well.
- Place a spoonful of the mixture in the center of an egg roll wrapper.
- Fold the sides over and roll tightly. Seal with water.
- Heat oil in a frying pan over medium heat.
- Fry egg rolls until golden brown, about 3-4 minutes per side.
- Drain on paper towels before serving.
Notes
- Serve with salsa or guacamole.
- Can be baked instead of fried for a healthier option.
- Freezes well before frying.
