- 200 grams of fresh noodles (or dried noodles, such as egg noodles or ramen)
- 4 tablespoons of chili oil
- 3 cloves of garlic, thinly sliced
- 2 tablespoons of vegetable oil (for frying garlic)
- 2 tablespoons of soy sauce
- 1 tablespoon of rice vinegar
- 1 teaspoon of sesame oil
- 2 green scallions, finely chopped
- 1 tablespoon of sesame seeds
- Salt, to taste
Instructions
- Cook the noodles in a large pot of salted boiling water until al dente, then drain and rinse under cold water.
- Prepare the chili oil by heating 4 tablespoons of oil in a small saucepan, adding chili flakes, and letting it sizzle.
- Fry the sliced garlic in 2 tablespoons of vegetable oil until golden brown and crispy, then drain on paper towels.
- In a large mixing bowl, combine the cooked noodles with chili oil, soy sauce, rice vinegar, sesame oil, and salt, tossing gently to coat.
- Serve the noodles in a bowl, topped with crispy garlic, chopped scallions, and sesame seeds.
Notes
- Fresh noodles are preferred for their chewy texture, but dried noodles can also be used.
- Adjust the spice level by varying the amount of chili oil used.
- Store leftovers in an airtight container in the fridge for up to three days.
