Description

A fresh and healthy dish made with chickpeas and served in lettuce leaves.


Ingredients

Scale
  • 1 can of chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 head of lettuce (e.g. romaine or butter)

Instructions

  1. In a bowl, combine chickpeas, tomatoes, cucumber, onion, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the chickpea mixture and toss to combine.
  4. Separate lettuce leaves and spoon the chickpea mixture into each leaf.
  5. Serve immediately and enjoy.

Notes

  • Can substitute other vegetables as desired.
  • Add feta cheese for extra flavor.
  • Best served fresh.
