Description
A fresh and healthy dish made with chickpeas and served in lettuce leaves.
Ingredients
Scale
- 1 can of chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 head of lettuce (e.g. romaine or butter)
Instructions
- In a bowl, combine chickpeas, tomatoes, cucumber, onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the chickpea mixture and toss to combine.
- Separate lettuce leaves and spoon the chickpea mixture into each leaf.
- Serve immediately and enjoy.
Notes
- Can substitute other vegetables as desired.
- Add feta cheese for extra flavor.
- Best served fresh.
