Ingredients
Scale
- 2 boneless, skinless chicken breasts (about 1 lb or 450 g)
- 8 oz (225 g) egg noodles
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- Salt – to taste
- Black pepper – to taste
- 1 tablespoon olive oil (for cooking)
Instructions
- Season the chicken breasts with salt and black pepper on both sides and let sit for a few minutes.
- Bring a pot of salted water to a boil, add the egg noodles, and cook according to package instructions (about 6-8 minutes). Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat, add the seasoned chicken breasts, and cook for about 6-7 minutes on each side until golden brown and fully cooked (internal temperature should reach 165°F or 75°C). Remove and let rest.
- In the same skillet, reduce heat to medium, add butter and minced garlic, sauté for 1-2 minutes until fragrant, then add the drained egg noodles and toss to coat. Season with additional salt and black pepper to taste.
- Slice the rested chicken breasts and arrange them over the buttery noodles, garnishing with fresh parsley before serving.
Notes
- Use a meat thermometer to ensure chicken is cooked to 165°F (75°C).
- Season the boiling water for the noodles to enhance their flavor.
- Let the chicken rest after cooking to keep it moist.
- Consider adding vegetables like spinach or bell peppers for added nutrition.
