Description

  • 8 oz (225 g) egg noodles
  • 4 tablespoons unsalted butter

  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Season the chicken breasts with salt and black pepper on both sides and let sit for a few minutes.
  2. Bring a pot of salted water to a boil, add the egg noodles, and cook according to package instructions (about 6-8 minutes). Drain and set aside.
  3. Heat olive oil in a large skillet over medium-high heat, add the seasoned chicken breasts, and cook for about 6-7 minutes on each side until golden brown and fully cooked (internal temperature should reach 165°F or 75°C). Remove and let rest.
  4. In the same skillet, reduce heat to medium, add butter and minced garlic, sauté for 1-2 minutes until fragrant, then add the drained egg noodles and toss to coat. Season with additional salt and black pepper to taste.
  5. Slice the rested chicken breasts and arrange them over the buttery noodles, garnishing with fresh parsley before serving.
