Description
A hearty chicken and white bean stew that warms you up.
Ingredients

- 1 lb chicken breast, diced
- 2 cups white beans, canned or cooked
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat oil in a pot over medium heat.
- Add onion, carrots, and celery. Sauté until soft.
- Add garlic and cook for 1 minute.
- Add chicken and cook until browned.
- Stir in white beans, broth, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper.
- Serve hot.
Notes
- Use canned beans for convenience.
- Adjust seasoning as desired.
- Leftovers can be stored in the fridge for up to 3 days.
