Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla strips for garnish
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper. Sauté until softened.
  3. Stir in diced tomatoes, chicken broth, shredded chicken, black beans, corn, cumin, and chili powder.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Season with salt and pepper.
  6. Serve hot, garnished with tortilla strips and cilantro.
