Description

A hearty chicken taco casserole packed with flavor.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained
  • 1 cup corn
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups tortilla chips, crushed
  • 2 cups shredded cheese
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix chicken, black beans, corn, taco seasoning, and salsa.
  3. In a baking dish, layer half of the crushed tortilla chips.
  4. Add half of the chicken mixture on top of the chips.
  5. Sprinkle with half of the cheese.
  6. Repeat the layers with the remaining ingredients.
  7. Top with sour cream.
  8. Bake for 25-30 minutes until cheese is bubbly.

Notes

  • Serve with avocado or guacamole.
  • Can substitute ground beef for chicken.
  • Adjust spice level with more or less taco seasoning.
