Description
A simple and flavorful chicken spaghetti dish made with Ro-Tel tomatoes.
Ingredients

- 8 oz spaghetti
- 2 cups cooked chicken, shredded
- 1 can (10 oz) Ro-Tel diced tomatoes with green chilies
- 1 cup cream of chicken soup
- 1 cup shredded cheddar cheese
- 1/2 cup onion, chopped
- 1/2 cup bell pepper, chopped
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Cook spaghetti according to package instructions. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add onion and bell pepper, cook until soft.
- Stir in shredded chicken, Ro-Tel tomatoes, cream of chicken soup, garlic powder, salt, and pepper. Mix well.
- Simmer for 5 minutes, stirring occasionally.
- Add cooked spaghetti to the skillet and mix until well combined.
- Top with shredded cheddar cheese and cover until cheese melts.
- Serve hot.
Notes
- This dish can be made ahead and reheated.
- Adjust the spice level by choosing mild or hot Ro-Tel.
- Leftovers can be stored in the fridge for up to 3 days.
