Description

A simple and flavorful chicken spaghetti dish made with Ro-Tel tomatoes.


Ingredients

  • 8 oz spaghetti
  • 2 cups cooked chicken, shredded
  • 1 can (10 oz) Ro-Tel diced tomatoes with green chilies
  • 1 cup cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook spaghetti according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add onion and bell pepper, cook until soft.
  3. Stir in shredded chicken, Ro-Tel tomatoes, cream of chicken soup, garlic powder, salt, and pepper. Mix well.
  4. Simmer for 5 minutes, stirring occasionally.
  5. Add cooked spaghetti to the skillet and mix until well combined.
  6. Top with shredded cheddar cheese and cover until cheese melts.
  7. Serve hot.
