Description

Chicken ricotta meatballs served with spinach alfredo sauce.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 cups spinach
  • 1 cup heavy cream
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix ground chicken, ricotta, parmesan, egg, breadcrumbs, garlic powder, onion powder, salt, and pepper.
  3. Form the mixture into meatballs.
  4. Place meatballs on a baking sheet and bake for 20 minutes.
  5. In a pan, heat heavy cream over medium heat.
  6. Add spinach and cook until wilted.
  7. Stir in mozzarella until melted.
  8. Serve the meatballs with the spinach alfredo sauce.
