Description

Chicken ricotta meatballs in spinach alfredo sauce is a creamy and delicious dish that combines tender meatballs with a rich sauce.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 cup breadcrumbs
  • 2 cups fresh spinach
  • 2 cups heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine ground chicken, ricotta, Parmesan, egg, breadcrumbs, salt, and pepper.
  3. Form the mixture into meatballs.
  4. Heat olive oil in a skillet and brown the meatballs on all sides.
  5. Remove meatballs and set aside.
  6. In the same skillet, sauté garlic until fragrant.
  7. Add heavy cream and bring to a simmer.
  8. Add fresh spinach and cook until wilted.
  9. Return meatballs to skillet and simmer for 10 minutes.
  10. Serve hot with extra Parmesan if desired.
