- 1 pound ground chicken
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 cup breadcrumbs
- 2 cups fresh spinach
- 2 cups heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine ground chicken, ricotta, Parmesan, egg, breadcrumbs, salt, and pepper.
- Form the mixture into meatballs.
- Heat olive oil in a skillet and brown the meatballs on all sides.
- Remove meatballs and set aside.
- In the same skillet, sauté garlic until fragrant.
- Add heavy cream and bring to a simmer.
- Add fresh spinach and cook until wilted.
- Return meatballs to skillet and simmer for 10 minutes.
- Serve hot with extra Parmesan if desired.
