- 2 cups cooked rice
- 1 lb chicken fillet, diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 can black beans, drained
- 1 cup corn
- 1 cup salsa
- 1 tsp chili powder
- 1 tsp cumin
- 1 cup shredded cheese
- Salt to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the chicken until no longer pink.
- Add the bell peppers and onion, cooking until soft.
- Stir in the black beans, corn, salsa, chili powder, and cumin.
- Combine the cooked rice with the chicken mixture.
- Transfer to a baking dish and top with shredded cheese.
- Bake for 20-25 minutes or until cheese is melted and bubbly.
Notes
- Feel free to use leftover chicken.
- Adjust spice levels by adding more chili powder.
- Garnish with cilantro or avocado if desired.
