Description
A quick and easy chicken fajita casserole that combines all the flavors of fajitas in one dish.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup bell peppers, sliced
- 1 cup onion, sliced
- 1 can black beans, drained
- 1 cup corn
- 1 cup salsa
- 2 cups shredded cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine cooked chicken, bell peppers, onion, black beans, corn, salsa, chili powder, cumin, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes until heated through and cheese is bubbly.
- Let cool for a few minutes before serving.
Notes
- Serve with tortillas or over rice.
- Top with sour cream or avocado if desired.
