Ingredients

- 1 lb chicken breast, diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cups cooked rice
- 1 tablespoon olive oil
- 1 tablespoon fajita seasoning
- 1 cup black beans, drained
- 1 cup corn, drained
- 1 avocado, sliced
- 1 cup salsa
- 1 cup shredded cheese
Instructions
- Heat olive oil in a pan over medium heat.
- Add chicken and fajita seasoning, cook until chicken is no longer pink.
- Add bell peppers and onion, sauté until tender.
- In a bowl, layer rice, chicken mixture, black beans, corn, avocado, salsa, and cheese.
- Serve immediately.
