Ingredients

- 2 cups cooked rice
- 1 lb chicken breast, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- 1 cup black beans, drained
- 1 cup corn, drained
- 1 avocado, sliced
- 1 lime, juiced
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add sliced chicken and cook until browned.
- Add bell pepper and onion, stir-fry until softened.
- Stir in fajita seasoning, black beans, and corn. Cook for 5 minutes.
- Serve over rice, topped with avocado and lime juice.
- Garnish with fresh cilantro.
