A healthy and hearty chicken cauliflower rice casserole.
Ingredients

- 2 cups cauliflower rice
- 1 lb cooked chicken, shredded
- 1 cup broccoli florets
- 1 cup shredded cheese
- 1/2 cup cream
- 1/2 cup chicken broth
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix cauliflower rice, shredded chicken, broccoli, cheese, cream, chicken broth, garlic powder, onion powder, salt, and pepper.
- Transfer the mixture into a greased baking dish.
- Bake for 25-30 minutes until heated through and cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
- You can add other vegetables as desired.
- This dish can be made ahead of time and stored in the fridge.
- Leftovers can be reheated in the oven or microwave.
