Description

A healthy and hearty chicken cauliflower rice casserole.


Ingredients

  • 2 cups cauliflower rice
  • 1 lb cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup shredded cheese
  • 1/2 cup cream
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix cauliflower rice, shredded chicken, broccoli, cheese, cream, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Transfer the mixture into a greased baking dish.
  4. Bake for 25-30 minutes until heated through and cheese is bubbly.
  5. Let it cool for a few minutes before serving.
