A healthy and satisfying chicken cauliflower rice casserole.
Ingredients

- 1 lb chicken fillet, diced
- 4 cups cauliflower rice
- 1 cup broccoli florets
- 1 cup shredded cheese
- 1/2 cup chicken broth
- 1/4 cup cream cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the diced chicken until browned.
- Add cauliflower rice and broccoli to the skillet.
- Stir in chicken broth and cream cheese until well mixed.
- Season with garlic powder, onion powder, salt, and pepper.
- Transfer the mixture to a baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes until bubbly and golden.
Notes
- You can add other vegetables of your choice.
- Make sure chicken is cooked through.
- Store leftovers in an airtight container in the fridge.
