Description

A creamy cheesecake with a cherry and pistachio topping.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 packages (8 oz each) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup cherries, pitted and halved
  • 1/2 cup pistachios, chopped

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese until smooth. Add sugar and vanilla; mix well.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream until combined.
  6. Pour the mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set.
  8. Remove from oven and let cool.
  9. Top with cherries and pistachios before serving.

Notes

  • Chill the cheesecake for at least 4 hours before serving.
  • Use fresh cherries for the best flavor.
  • Store leftovers in the refrigerator.
