Ingredients

  • Long-grain rice: 1 cup (uncooked)
  • Ground beef: 1 lb (450 g)
  • Taco seasoning: 1 packet (about 1 oz or 28 g)
  • Diced tomatoes: 1 can (14.5 oz or 410 g), undrained
  • Black beans: 1 can (15 oz or 425 g), drained and rinsed
  • Corn: 1 cup (frozen or canned, drained)
  • Shredded cheddar cheese: 1 cup (about 4 oz or 113 g)
  • Green onions: 1/4 cup, chopped
  • Fresh cilantro: 1/4 cup, chopped
  • Olive oil: 1 tablespoon (for cooking)
  • Salt and pepper: to taste
  • Water or broth: 2 cups (for cooking rice)

Instructions

  1. Gather all your ingredients to make the cooking process smoother.
  2. In a medium saucepan, combine 1 cup of long-grain rice with 2 cups of water or broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
