Description

A delicious one-pan meal combining cheesy beef, enchiladas, and tortellini.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 package (9 oz) cheese tortellini
  • 1 cup shredded cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef with onion and garlic.
  2. Drain excess fat.
  3. Add enchilada sauce, chili powder, cumin, salt, and pepper.
  4. Stir in tortellini and bring to a simmer.
  5. Cover and cook until tortellini is tender.
  6. Sprinkle cheese on top and cover until melted.
