Ingredients

- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 1 package (9 oz) cheese tortellini
- 1 cup shredded cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef with onion and garlic.
- Drain excess fat.
- Add enchilada sauce, chili powder, cumin, salt, and pepper.
- Stir in tortellini and bring to a simmer.
- Cover and cook until tortellini is tender.
- Sprinkle cheese on top and cover until melted.

- Use any type of cheese you prefer.
- Replace ground beef with turkey for a lighter option.
- Top with fresh cilantro or sour cream if desired.
