Description

A healthy alternative to traditional fried rice using cauliflower and shrimp.


Ingredients

Scale
  • 1 medium head of cauliflower, grated
  • 200g shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1/2 cup peas and carrots
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 green onion, chopped

Instructions

  1. Grate the cauliflower to create rice-like pieces.
  2. Heat oil in a pan over medium heat.
  3. Add garlic and sauté until fragrant.
  4. Add shrimp and cook until pink.
  5. Stir in peas and carrots; cook for 2 minutes.
  6. Add cauliflower rice and soy sauce; stir well.
  7. Push the mixture to one side and pour in the beaten eggs.
  8. Scramble the eggs until cooked, then mix everything together.
  9. Garnish with green onion before serving.

Notes
