A healthy alternative to traditional fried rice using cauliflower and shrimp.
Ingredients

- 1 medium head of cauliflower, grated
- 200g shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1/2 cup peas and carrots
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 green onion, chopped
Instructions
- Grate the cauliflower to create rice-like pieces.
- Heat oil in a pan over medium heat.
- Add garlic and sauté until fragrant.
- Add shrimp and cook until pink.
- Stir in peas and carrots; cook for 2 minutes.
- Add cauliflower rice and soy sauce; stir well.
- Push the mixture to one side and pour in the beaten eggs.
- Scramble the eggs until cooked, then mix everything together.
- Garnish with green onion before serving.
Notes
- Adjust soy sauce to taste.
- Try adding bell peppers for extra flavor.
- Use fresh shrimp for best results.
