Description

A healthy twist on fried rice using cauliflower.


Ingredients

  • 1 medium cauliflower, grated
  • 2 eggs
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tablespoons soy sauce
  • 1 tablespoon oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Grate the cauliflower using a food processor or box grater.
  2. Heat oil in a pan over medium heat.
  3. Add the cauliflower and sauté for 5 minutes.
  4. Push the cauliflower to the side and scramble the eggs in the pan.
  5. Add mixed vegetables and soy sauce, stir everything together.
  6. Cook for another 3-4 minutes until heated through.
  7. Season with salt, pepper, and green onions before serving.
