Description
A healthy twist on fried rice using cauliflower.
Ingredients

- 1 medium cauliflower, grated
- 2 eggs
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 tablespoons soy sauce
- 1 tablespoon oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Grate the cauliflower using a food processor or box grater.
- Heat oil in a pan over medium heat.
- Add the cauliflower and sauté for 5 minutes.
- Push the cauliflower to the side and scramble the eggs in the pan.
- Add mixed vegetables and soy sauce, stir everything together.
- Cook for another 3-4 minutes until heated through.
- Season with salt, pepper, and green onions before serving.
Notes
- Use fresh or frozen mixed vegetables.
- Adjust soy sauce to taste.
- For extra flavor, add garlic or ginger.
