Ingredients

- 1 lb chicken breast, sliced
- 1 cup cashews
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 1/4 cup water
Instructions
- Heat sesame oil in a pan over medium heat.
- Add chicken and stir-fry until cooked through.
- Add ginger and garlic, stir for 1 minute.
- Add mixed vegetables and cook until tender.
- Mix soy sauce, cornstarch, and water in a bowl.
- Pour the sauce over the stir-fry and cook until thickened.
- Add cashews and stir to combine.
- Serve hot over rice or noodles.
Notes
- You can substitute chicken with tofu for a vegetarian option.
