Carrot fritters are a tasty and healthy snack made from fresh carrots.
Ingredients

- 2 cups grated carrots
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 cup chopped parsley
- Oil for frying
Instructions
- Grate the carrots and place them in a bowl.
- Add flour, cheese, eggs, salt, pepper, garlic powder, onion powder, and parsley to the bowl.
- Mix all ingredients until well combined.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet.
- Fry until golden brown, about 3-4 minutes per side.
- Remove and drain on paper towels.
- Serve warm.

- Adjust seasoning to taste.
- Substitute gluten-free flour for a gluten-free option.
