Ingredients

- 2 medium carrots, julienned
- 1 cucumber, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Wash and peel the carrots.
- Julienne the carrots and slice the cucumber.
- In a bowl, combine the olive oil and lemon juice.
- Add the carrots and cucumber to the bowl.
- Toss to combine and season with salt and pepper.
- Serve chilled.
